Water Management
Water is a critical ingredient in any restaurant business. We filter the water high-standard water filtration system before using to reduce any possible pollution factors. An-Shin is committed to fresh ingredients as the ingredients are directly delivered to the stores from farms, so we use more water to clean the ingredients compared to the other restaurants. On the other hand, wastewater is mainly discharged from kitchen so we set up pre-treatment equipment according to the Standards for the User’s Drainage Facility of Sewerage by installing oil intercep-tors. According to the current water use data, the possibility of water shortage in headquarter and stores is lower than the global average as they are not located at areas with water stress. In order to reduce water waste, we reinforce water saving management, install water-saving facilities and adjust the flow of faucets of guest sinks. We also introduced water saving toilet to the newly opened stores and 90 water saving toilets were installed so far. In 2020, we installed 22 water saving toilets which can save up to 50-67% of water per flush.
